In 2012, Nicole J. Caruth founded With Food in Mind, which develops art-based approaches to address food education and food injustice. Their projects collectively explore the potential of visual art and artists to impart nutritional knowledge and prevent childhood obesity in low-income neighborhoods and communities of color.
